Tomato Mozzarella Zucchini


Mmmm.  I love zucchini.  I also love roasted tomatoes.  This is the best of both worlds.  It's like pizza on top of zucchini.  And it's so impressive looking!  But SO easy.


Ingredients:  zucchini, grape tomatoes, olive oil, plain bread crumbs, garlic and fresh mozzarella or fontina cheese.


Slice the zucchini in half lengthwise and scoop out the seeds with a spoon.


Rub them with olive oil and sprinkle with fresh minced garlic, salt and pepper.


Halve some grape or cherry tomatoes and arrange them in the grooves where the seeds were scraped out of the zucchini.


Sprinkle with the bread crumbs.


Bake at 350 degrees for 30 minutes.  Then place small bits of the cheese in between the tomatoes.


Place it under the broiler for 5-6 minutes, until the cheese is bubbly.  Sprinkle with freshly grated parmesean cheese.


And that's how you make zucchini look pretty!  Oh yeah, and it tastes wonderful too!!

Zucchini
Garlic, minced

Grape or cherry tomatoes
