Perfect Roasted Sea Bass


Sea bass is hands down my favorite piece of fish.  It is expensive; but sooooooo worth it!  It's creamy, flaky and AMAZING.  I have perfected it.  I'll share it with you ;)


Ingredients:  sea bass, garlic, olive oil, Italian seasoning, salt, pepper and white wine.


Mix the olive oil, minced garlic salt and pepper together in a small bowl.


Place the fish in a baking dish and rub it with the olive oil mixture.


Sprinkle with Italian seasoning.  Pour the white wine into the baking dish around the fish.  WARNING:  DO NOT POUR IT ON TOP OF THE FISH.  If you do, you will wash off all of the seasoning.  The purpose of the wine is to steam in the oven and slightly poach the fish while it's baking.


Bake at 450 degrees for 15-20 minutes.  Immediately out of the oven, cover with foil and let it rest for about 10 minutes.  Serve with fresh lemon wedges.  No doubt about it - this is the best fish EVER!
