Peanut Butter Sheet Cake


OK.  This picture does not even nearly do this cake justice.  It is so incredibly rich and amazing.

I'm on a new mission to become the best sheet cake baker within a 50 mile radius of my child(ren).  I plan on having to bake lots and lots of birthday cakes in the near (and distant) future.  I saw this one on Pinterest and thought I would try it because, although it's not a classic flavor, it looked devilishly good.  And boy....was it!


Ingredients:  sugar, baking SODA (not powder, which I accidentally photographed - thankfully I put soda in the cake), flour, salt, butter, peanut butter, milk, vanilla, eggs and powdered sugar.



Start by adding the dry ingredients (sugar, baking soda, flour and salt) to a mixing bowl.


And mix them all together.


Then add butter, peanut butter and some water to a sauce pan.


And bring to a boil.


Pour the warm peanut butter mixture over the dry ingredients and mix well.


Add milk, vanilla and eggs.


And mix well.  The batter should be pretty smooth.


Grease and flour a large sheet pan (I use Baker's Joy cooking spray with flour).


Pour the batter into the greased and floured pan and smooth it out to the edges.


Bake at 400 degrees for 20 minutes until lightly golden around the edges and a cake tester comes out clean.  Let the cake cool completely.


To make the frosting, add some butter, peanut butter and milk to a sauce pan.


And heat the mixture to a boil.


Add powdered sugar and mix well.  Adjust with more sugar to thicken or milk to thin as needed until it reaches the desired consistency (should be pourable but still thick and not runny).


Pour onto cooled cake.


And spread around evenly to the edges of the pan.


Then cut yourself a ginormous piece and savor every rich, luscious bite!  This cake would be perfect with vanilla ice cream (I like Blue Bell Vanilla Bean), but unfortunately I didn't have any around.  Perfect for a birthday!  Or just a random Friday night ;)
