Hot Wings


It takes two things to keep a marriage going:  sex and a killer hot wing recipe.  This is THAT recipe.


Ingredients:  chicken wings, flour, salt, pepper, cayenne pepper, Frank's Red Hot original cayenne pepper sauce, butter, lemon and dried basil.


Rinse the wings well in a colander.


And pat them dry with paper towels.


Add some flour to a brown paper bag and season it with salt, pepper and cayenne pepper.  If you don't have a brown paper bag, you can use a Ziploc or plastic bag, but the flour doesn't stick to the paper bag which allows the chicken to get more evenly coated.


Add the chicken wings then roll up the bag and shake it really well to ensure the wings get coated in the flour.


Lay them out evenly on a sheet pan and let them rest for about 30 minutes.  This allows the chicken to soak up some of the flour which helps keep your frying oil from getting too goopy.  It also allows the chicken to crisp up a little better.


Heat some vegetable oil to 350 degrees in a heavy pot or cast iron skillet.


And fry the wings for about 12 minutes.  I fry them for 6 minutes, turn them all over and fry for another 6 minutes to make sure they are evenly cooked.


While the wings are frying, add the hot sauce, melted butter, zest and juice of one lemon and dried basil to a mixing bowl.


And whisk it all together.  Set aside.


When the wings are done, the should be cooked all the way through and slightly browned.


Take them out of the oil two or three at a time and immediately coat them with the sauce.  After I get them all coated, I go back through in batches and coat them a second time.


Turn them out onto a platter and drizzle with the remaining sauce.  If you need to, you can keep them warm in a 200 degree oven while you make another batch.


Serve with blue cheese dressing (or ranch dressing with some blue cheese crumbled on top like I do).  If you're single, these will get you a man.  If you have a man, these will get you engaged.  If you're married, these will get you a 50th anniversary.  Guaranteed ;)
