Linguine with Shrimp Scampi



It's Wednesday - daycare day - which means it's "30 minute meal" night at the Taylor's.  This one is really more like a 15 minute meal.  But it's just as delicious and fancy as a 3 1/2 hour meal.  It's also a good one to whip up if you haven't had time to make it to the grocery store.  The ingredients are so basic I almost always have them on hand; or some variation thereof that could be easily substituted.  If you haven't noticed, I LOVE to know what my options are for substitution!


Ingredients:  olive oil, salt, linguine, butter, garlic, shrimp, parsley, lemon, red pepper flakes.


Cook the linguine according to the package directions.


Drain and set aside.


Meanwhile, mince some garlic and chop up some Italian parsley.


Zest a lemon.


And juice a couple of lemons.


Thinly slice a lemon.  This isn't actually meant to be eaten, just to make the dish look purdy.


Melt some butter and olive oil in a skillet and saute the garlic for about a minute or so over medium-low heat.


Add the shrimp and season with salt and pepper.


Let them cook until they are orange and opaque, about 5-6 minutes.


Off the heat, add the parsley, lemon zest, lemon juice, lemon slices and red pepper flakes.


Add the linguine back to the pan and toss it all together.


That's all folks!  It doesn't get much quicker than that!

*Note, the lemon in the recipe is VERY overpowering.  I would suggest only using 1/2 of the juice called for in the recipe and then adding more to the finished dish to taste.
